Last night's dinner recipes!

I made the recipes below last night for dinner and they were absolutely fabulous!

Herbed Chicken Breast with a sherry/sour cream sauce

8 skinless boneless chicken breasts
2 cups sour cream
½ cup sherry
½ cup butter
2 cloves garlic minced
½ sweet onion diced
2 Tablespoons chopped fresh rosemary
¼ cup chopped fresh Thyme
Salt and pepper to taste

Preheat oven to 350 degrees. In a large skillet, sauté chicken in butter/margarine until browned. Remove chicken and place in 13 x 9 baking dish. Add garlic, onion and sherry to pan drippings and sauté onions until tender. Add sour cream and heat through. Season the chicken breasts with salt, pepper, rosemary and thyme. Pour sour cream mixture over the chicken and bake for 35 minutes.

Praline Yams

2 (29 oz) can Princella Cut Yams, drained
2/3 cups chopped pecans
2/3 cups coconut
2/3 cups firmly packed brown sugar
6 tablespoons flour
6 tablespoons butter or margarine, melted

Heat oven to 350 degrees. Place drained yams into 3 quart casserole/baking dish. In a small bowl combine remaining ingredients; blend well. Sprinkle over yams. Bake at 350 degrees for 35 to 40 minutes or until bubbly. 8 servings
