A Batido is a cuban drink, similiar to the American Milkshake or smoothie. I got this recipe from http://eatingwell.com and the kids made it for breakfast. It was a huge hit!
For 1 serving --
Ingredients --
1 ripe banana, peeled and cut into chunks
1/2 cup frozen blueberries
1 Tablespoon Sugar
4 ice cubes
1 cup buttermilk
Instructions
Combine banana, blueberries, sugar, ice cubes and buttermilk in a blender and blend until smooth.

Chicken Salad Sandwhich Recipe
Quick and easy for these hot summer days ahead!
Chicken Salad Sandwhich Recipe
2 chicken breasts, cooked and finely chopped (boiled preferably so the chicken isn't dry)
4 stalks of celery finely chopped
5 hard cooked eggs, chopped
4 TBSP. sweet pickle relish
1/2 tsp. ground black pepper
2/3 cup mayonnaise
Combine all ingredients. Chill in covered container until ready to serve. Butter bread, and spread on sandwhiches.

I made this tonight for dessert and it was WONDERFUL!!!
Quick and Easy Strawberry Shortcake
For shortcake –
1 frozen Sara Lee Pound Cake
1 small container Cool Whip
1 pint fresh strawberries slice into halves, tops removed
Ganache –
½ cup heavy whipping cream
8 ounces semi sweet or bittersweet chocolate
Optional -- 1 teaspoon instant espresso powder and 1 tablespoon KahlĂșa OR 1 tablespoon of any liqueur or 2 teaspoons vanilla extract
Thaw Pound Cake and Cool Whip in Fridge (5 hours). Slice Pound Cake horizontally into 3 layers. Spread Cool Whip ½ inch thick on bottom layer, top with ½ of the strawberry slices. Add second layer of pound cake. Top with ½ inch thick layer Cool Whip and remainder of strawberries. Add top layer of pound cake. Set aside.
Prepare Ganache -- Place chopped chocolate in a medium-sized, heat proof bowl. Make note that the hot cream will eventually be poured over it and must cover it entirely. Pour cream into a medium saucepan under medium heat and bring to a boil. Remove from heat and pour over chocolate. Shake bowl and allow to stand for about 2 minutes. Stir with a whisk until smooth. Add espresso powder dissolved in liqueur or other optional ingredients.
Drizzle over pound cake and let set for a minute. Slice and serve! Make 4 servings. Recipe can be doubled!

Wood Wick Candles
I am a HUGE candle fan, so my birthday present from Sarah (of course, Matt bought it... but I told him I didn't want anything more from him for my birthday since he bought tickets to the 2 shows I wanted to see in Vegas when we go in June...so this was his way of justifying giving me more gifts---IT WAS FROM SARAH) was a Wood Wick Candle. It is one of the neatest candles I've seen. It has an actual wood wick, and when you light it, it crackles while it burns! I lit it last night and was amazed. Makes for wonderful ambiance. I told Matt I wish we had a cabin in the woods, because I'd fill the house with these candles!

Just finished Jodi Picoult's Change of Heart
I just finished reading Jodi Picoult's latest novel "Change of Heart" and would definitely recommend it to friends and family. Put yourself in this situation -- You are pregnant and your husband and daughter are murdered. When you give birth to your child, she has a heart defect and is ill.
